Henry's Peanut Butter Cookies

My grandfather, Henry, was a straightforward man. He liked things simple and clear, he was a man of few words (most of them clever and witty), and he didn't go for extravagance. Papa died when I was a teenager, but I think he'd've loved these cookies. They're exactly what they're called -- peanut butter, in cookie form -- they contain only a handful of ingredients, and they're simply delicious. Soft and chewy, these aren't the dry, crumbly peanut butter cookies at every church picnic or Scout cookout you've ever attended -- they're better.
