Pistachio Shorties

Nutty, crumbly, dense. If you've ever enjoyed a polvorón (aka, Mexican wedding cookie, Russian tea cake), you'll recognize this lovely, slightly sweet cookie. We use pistachios, just a hint of cardamom, and European butter, shape them into shortbread bars (because we love them with tea) -- and finish them off with a dusting of confectioners sugar.
